Bar Pleiades


Daniel Boulud opened Bar Pléiades in the Surrey Hotel, and though head bartender Cameron Bogue comes from the DB Bistro in Vancouver, this is no Hoser Hut. In his new role for Pléiades, Bogue designed libations that echo the organization of Café Boulud’s menu next door. Prices on the seasonal cocktail list run from $16 (for drinks like the Jack Rose, with apple brandy, lemon, and housemade grenadine) to $25 (as in the Gilded Pear, with Glenfiddich, Clear Creek pear, Lillet rose, bitters, and rosemary). The suitably upscale bar menu offers classics like Beau Soleil oysters, charcuterie, and cheeses, as well as tempura prawns, flatbread, and pork trotter corn dogs. The charming space, designed by Lauren Rottet, alludes to Coco Chanel: Black-and-white lacquered surfaces recall a makeup compact, and if you've ever dreamed of crawling inside an enormous Chanel bag, see what it’s like to sit on one reimagined as a quilted-leather booth. — Alexandra Vallis
